Easy, healthy vegetables recipe :
Lotek (Most Popular Sundanese Food)



This is a very healthy food. Full of vegetables with exotic delicious spicy seasoning named Lotek. If you are bored with simple salads, try this another one. Bet, you will like it.

Lotek is the most popular Sundanese Food for lunch. (Sunda is original ethnic in Bandung). Usually we can find it sold at sidewalk in small place. But, this traditional food much rarely to find now. So, why don't we try to make it by ourselves.



Materials Cuisine:
  • Spinach, cut, boiled (or any green vegetables)
  • Sprouts, dip to boiling water
  • Cabbage, cut into match
  • 1 pcs fried tofu, cut into match
  • 1 pcs ketupat (rice cake boiled in a rhombus shaped packet of plaited young cocounut leaves) cut into match
  • Fried onion to taste
Seasons to pestle:
  • 2-3 tablespoons peanut, fried
  • 1 boiled potato
  • 1/2 tablespoons brown sugar
  • 1 pc cayenne pepper (to taste)
  • 1 clove garlic
  • 1 cm kencur (galingale)
  • Terasi (fermented shrimp/ small fish) just little
  • 2-3 tablespoons tamarind water
  • 1/2 tsp salt

Cooking Method:
  1. Prepare the mortar. Pestle cayenne pepper, kencur/ galingale, garlic, terasi,  and salt until smooth.
  2. Enter peanuts, back pestle until smooth. Add boiled potato, brown sugar, pestle until smooth.
  3. Dilute the flavor by adding 2-3 tablespoons tamarind water. Stir until smooth. Enter the spinach, bean  sprouts, cabbage, rice cake and tofu , stir all ingredients until well blended.
  4. Settlement: Put on a plate, sprinkle with garlic crackers also kerupuk (chips made of flour flavored with fish or shrimp) will make it complete.Serve.

Tips :
  • Make just before serving.
  • Because this recipe is only for one serving, then portion of spinach, sprouts, and cabbage just guessed it.  Most only a handful of each course.
  • The addition of acidic water should be gradual, not to be too liquid seasoning, because then usually when the vegetables have entered, so it is more liquid seasoning.
  • If you have no tofu or ketupat, no problem making without it. Most important is fresh vegetables.
